  2. Add cubed ice.
  3. Pour on soda.
  4. Dress with the apple slice.

Hidden deep in the Garden of England, Hush Heath Estate is home to the award-winning English sparkling wine, Balfour Brut Rosé. The Estate comprises 400 acres of perfectly manicured vineyards, apple orchards and ancient oak woodlands rich with wildlife, flora and fauna.

Hush Heath Estate’s boutique, state-of-the-art winery in Kent was built in 2010 and has allowed them to take full creative control of their wines and ciders. They have sourced bespoke wine making equipment including hand crafted, stainless steel tanks from Champagne and a bottling line from Italy.

Hush Heath offer tours and tastings alongside corporate and wedding venue hire. They also boast a group of pubs, restaurants and boutique hotel rooms.

Warm squash & mushroom salad with Alsop & Walker Ewe Eat Me Cheese and caramelised nuts

What I love about this salad is both the beautiful flavour and the differing textures. I have used white oyster mushrooms from Basil’s Fungi Farm, but equally a brown chestnut would work well too.
