800g tomatoes – fresh or good quality tinned plum tomatoes

1 medium onion, finely chopped

2 garlic cloves, crushed

1tbsp red wine vinegar

1tsp soft brown sugar

Having an easy and delicious tomato sauce on hand, or in the freezer, means that you will always be able to rustle up a quick pasta dish, pizza, or even a flavoursome tomato base for a ratatouille or caponata. Large ripe plum (or a beefsteak like ‘Brandywine’) that melts in the pan is the ideal tomato, but good quality tins of plum tomatoes work well too. The secret is in the simmering, because the sauce needs time to reduce and draw out its flavour.

  1. Gently sauté onions and garlic in olive oil.
  2. Add the rest of the ingredients and simmer for around 35-40 minutes until the sauce has reduced and thickens in texture.
  3. Use or store – it will keep in a sealed container in the fridge for a week, or in the freezer for several months.
