- Mix all the marinade ingredients in a bowl then place ribs in baking dish and cover with marinade, cover with foil and refrigerate overnight.
- When you are ready to cook, preheat your oven to 160˚C, and bake for 1½ hours, turning ribs over once during the cooking.
- Preheat your BBQ to a medium/high heat. Remove ribs from marinade and place on the BBQ for five minutes on each side to get a charred and caramelised flavour.
- Meanwhile reduce the marinade a little and pour over the caramelised ribs.
- Serve with creamy coleslaw, sweet potato wedges and an
ice cold glass of Kentish cider.
