2 red onions, thinly sliced
2 cloves of sliced garlic
small bunch of fresh coriander, with the longer stalks chopped – don’t stress if you don’t have any fresh, I sometimes add frozen coriander in near the end
1tsp harissa powder
1tsp each of ground cumin and turmeric,
handful of cherry tomatoes, chopped in half – optional!
1 tin chopped tomatoes
1 jar Queen chickpeas (Bold Bean Co.)
1 pack large cooked prawns (or you can use raw and just cook in the sauce)
lemon and fresh coriander, toasted flaked almonds etc to serve
This is the kind of food I love… It ticks every box for me and what is at the heart of my recipes that I create to share through @theneedy.greedy. It is actually incredibly good for you, with lots fibre and protein. Most importantly it is utterly SUBLIME. The secret is using really good jarred chickpeas if you can, I love Bold Bean Co. You can make most of it ahead just adding the chickpeas and prawns at the last minute. Or have a more leisurely cook – it takes about 30 mins.
