Prep time:
Cooking time: 20 minutes
Total time:
Serves: 2
300g minced beef
1 red pepper
½ onion
2tbsp olive oil
250g grated mozzarella
100g sour cream
handful of chopped coriander
6 soft shell tacos
Few things bring a dish to life quite like a great spice blend. Dust Bros’ Mega Mexican is packed with bold, warming Mexican flavours, making it the perfect partner for these indulgent beef tacos. Combined with sweet peppers, onion and melted mozzarella, then finished with cool sour cream and fresh coriander, it’s an effortless recipe, full of flavour and perfect for sharing around the table.
1. Dice the bell pepper and onion into 1cm pieces. Sweat in a tablespoon of oil over medium heat until the onion turns translucent, then remove from the pan. 2. Add a little more oil to the pan and turn the heat to high. Add the beef mince and let it sit for a couple of minutes to brown, then break it up and colour the meat all over. 3. Stir in a tablespoon of Mega Mexican plus the peppers and onions. Mix well, then remove from the heat. 4. Spoon the mince generously onto your tacos, top with cheese, and fold over. 5. Fry the folded tacos in the same pan until lightly browned and the cheese melts. 6. Serve with sour cream and a coriander garnish. You can meet Dust Bros at Wealden Times Midwinter Fair from 19-21 November at The Hop Farm, Paddock Wood.
