Method:

  1. Preheat oven to 160°C, fan140°C, gas 3. Oil and line an 8 inch spring form cake tin. Mix cinnamon, salt and brown sugar in a bowl and leave to one side.
  2. Add the lemon juice to the milk.
  3. Beat your butter and caster sugar together until light and fluffy. (An electric stand alone beater is best.) Slowly add your eggs, adding a spoonful of flour if the mix looks like it is separating, then slowly add rest of flour. Now slowly add the milk and lemon juice mix to the batter.
  4. Layer the wet cake mix and sugary cinnamon mix into the cake tin, swirling as you go to create a marbled effect. Bake in the oven for 45 mins.
