2 Medium Free Range Pork Chops

150g Brie

200g Dried Pancetta or Smoked Bacon

2 Handfuls of Seasoned Breadcrumbs

3tbsp Olive Oil

2 Garlic Cloves

  1. Preheat the oven to 180°C/Gas 4/350°F.
  2. Bring the brie to room temperature and spread it onto the top of the pork chops.
  3. Preheat a pan with olive oil. Add the pancetta or smoked bacon and fry until crispy.
  4. Add garlic and breadcrumbs and cook for approx. 3 minutes.
  5. Scatter the pancetta and breadcrumb mix onto the pork chop and brie, pressing down firmly so that the breadcrumbs stick and form a crust.
  6. Bake in the oven for approx 20-30 minutes, depending on size.
  7. Serve with fresh local new potatoes and local asparagus.
