20g Butter

5 slices of thick white bread

Salt and pepper

2 good pinches of pepper

500g strong Cheddar, grated

300ml Double cream

4 Eggs, whisked

1 vine cherry Tomatoes

23cm square tin

Method:

  1. Butter the base of the tin. Remove bread crusts and cut so they completely cover the base of the tin. Season the bread base with salt, pepper and a pinch of cayenne. Spread the Cheddar cheese evenly over the bread base. Whisk the cream into the whisked eggs and season. Pour the cream and eggs on the cheese making sure it goes right to the edge of the tin.
  2. Bake the cheesy toast for 15-20 mins, it should be risen, reasonably firm and golden brown. When cooked leave it to rest and then cut into 3cm squares. Serve dusted with rest of cayenne and cherry tomato vine.
