Prep time:

Cooking time: 20 minutes

Total time:

Serves:

For the granola:

100g mixed nuts (I use pecans, flaked almonds, walnuts, cashews, hazelnuts – but use what you have/like)

150g jumbo oats

1tsp ground nut or olive oil

apples grated

1tsp cinnamon

tbsp maple syrup or agave nectar

30g dried fruit, such as chopped apricots, dates, cranberries etc

75g seeds (I use pumpkin, sunflower, linseed)

For the compote:

mixed frozen berries

cinnamon and optional icing sugar

A joyful abundance of fruits, seeds and nuts to create a filling and healthy breakfast. Make a batch of granola in advance, then just grab ready for breakfast. The compote takes moments to make, using frozen mixed berries.

  1. Preheat the oven to 180°C
  2. Mix the nuts, oats, grated apple, cinnamon, oil and syrup. Make sure the apple separates.
  3. Spread over a large baking tray or two and cook for 20 mins. You may need to turn it a couple of times to make sure it browns evenly. When browned take from the oven and allow to cool.
  4. Once cooled, add the seeds and dried fruits. This keeps for at least a week in a sealed container. Do play around with quantities, types of nuts, fruit etc according to your taste.

For the compote:
Allow a handful of berries per person. Pop into a saucepan, sprinkle with a pinch of cinnamon per person. Allow to warm through. Add a pinch of icing sugar if you prefer it sweeter and allow to dissolve.

To serve: I love using thick proper cold Greek yoghurt. Spoon over the berries and sprinkle with the granola.

Warm squash & mushroom salad with Alsop & Walker Ewe Eat Me Cheese and caramelised nuts

What I love about this salad is both the beautiful flavour and the differing textures. I have used white oyster mushrooms from Basil’s Fungi Farm, but equally a brown chestnut would work well too.
