2tsp cumin seeds

2tsp coriander

1tsp caraway

1tsp fennel

4 garlic cloves, crushed

2 small roasted peppers (from a jar)

4 chicken breasts

5 small red chillies, finely chopped

1tbsp tomato paste

1 lemon (juiced)

1tbsp olive oil

This is literally chicken coated in harissa seasoning and simply griddled. To make the harissa paste, see the ingredients below, or buy ready made.


Place all the harissa ingredients in a blender and blitz to a paste. Spread over chicken and leave to marinate for 30 minutes. Heat griddle pan and cook the coated chicken for 5-10 minutes on each side, until chicken is cooked through. Serve either hot with mixed seasonal vegetables, or cooled with salad.
