150g jumbo oats
100g mixed nuts (I use pecans, flaked almonds, walnuts, cashews, hazelnuts)
2 apples grated
1tsp cinnamon
2tbsp honey or agave nectar or even maple syrup
75g dried fruit (such as chopped apricots, dates, cranberries etc.)
75g seeds (I use pumpkin, sunflower, linseed)

This a super delicious healthy granola, and so tasty you can enjoy with yoghurt, fruit, milk or even as quick snack on its own. It is so much healthier than the shop bought ones as it has very little sugar and contains all natural ingredients. It will keep for at least a week in a sealed container. Do mix it up with whatever nuts, seeds and fruit you’d like to use. 1. Preheat the oven to 180˚C. Mix the nuts, oats, grated apple, cinnamon and agave nectar. Make sure the apple separates. 2. Spread over a large baking tray or two and cook for 20 mins. You may need to turn it a couple of times to make sure it browns evenly. 3. When browned, remove from the oven and allow to cool. 4. Once cooled, add the seeds and dried fruits. It keeps for at least a week in a sealed container. Do play around with quantities, types of nuts, fruit etc. according to your tastes. 5. Served as pictured with Greek yoghurt, blueberries, pomegranate seeds and mint leaves.
