Dessicated Coconut/Chopped Almonds for rolling the truffles in

The WT team resident health guru Helen gives an insight into how to create indulgent yet nutritious treats with her recipe for Raw chocolate truffles

  1. Put the nuts in a food processor and blitz until they reach a fine consistency.
  2. Add in the dates, cacao powder and coconut oil and combine in the food processor to make a smooth paste.
  3. Take small amounts of the paste and roll in your hands to make small(ish) truffles.
  4. After placing your desiccated coconut or chopped almonds in a bowl, roll each truffle around until fully coated.
  5. Pop them in the fridge to set, before devouring the whole lot!

Savoury gingerbread & local Camembert (Winnie’s Wheel)

To make this canapé you can use shop-bought gingerbread, but I prefer something a bit more savoury.

Parma ham basket with labneh, truffle or herb oil & Jerusalem artichoke crisp

A complex canapé with multiple elements, but the wow factor lies in the surprisingly simple-to-make basket.

Chilli beef, mozzarella & chilli jam bruschetta

A super easy canapé that can be elevated with homemade bread and chutney or simplified using shop-bought ingredients. The flexibility makes it ideal for both casual gatherings and more polished events.
