1kg chicken thighs (bone in, skin on)

2 lemons

500g Pink Fir Apple potatoes, cut in half (you can also use new potatoes)

olive oil

2tbsp dried oregano

3 fat cloves of garlic, crushed

A super easy but big flavour bomb of a chicken dish. Perhaps a good one-pan alternative to a Sunday roast, but definitely a make ahead, then shove in the oven, midweek crowd-pleaser. The hack is roasting the lemon and giving it a squeeze at the end of the of the cooking. You can leave out the potatoes and just serve on pasta or with salad or veg. But here the stars of the show are the gorgeous Pink Fir Apple potatoes from The Potato Shop in Tenterden

  1. Boil the potatoes in plenty of salted water until tender. Drain and allow to cool.
  2. Mix together 3tbsp olive oil, zest and juice of 1 lemon (keep the squeezed lemon), oregano, garlic and a pinch of sea salt.
  3. Put the chicken thighs in a large roasting tin. Mix over the lemony olive oil marinade, making sure everything is covered. If it looks a bit dry, add a little more oil. Cut the second lemon in half, add to the roasting tin, together with the remains of the lemon used in the marinade. Make sure the chicken is skin side up. Drizzle a little more olive oil over the skin of the chicken, sprinkle with sea salt and pepper. Your dish can sit in the fridge for a few hours until ready to cook.
  4. Take the chicken from the fridge prior to cooking to allow it to come to room temperature if you can. Preheat the oven to 200°C. Pop the chicken tray in. After 15 mins, add the potatoes and mix with all the juices, turn the oven down to 180°C. Cook for a further 20 mins. Cooking times will vary according to the size of the thighs and potatoes, but the skin should be golden. Squeeze the roasted lemon over. You will have a delicious sauce. Enjoy with salad, or green veg.
