I’m making the most of tomato season with this sensational dip. Slow roasting the tomatoes sweetens and intensifies their flavour, perfectly complementing the cool whipped feta. I love serving Kent Crisps, they are a real favourite with my family and have a wonderful range of flavours inspired by Kentish produce – they’re also perfect to scoop. The packaging is beautiful too, with iconic photos of the area.

Halve the tomatoes. Put in an oven proof dish with a tbsp of olive oil, the thyme, salt and pepper. Roast for approx 30 mins at 150°C. Allow to cool.

Crumble the feta and put in a bowl with the Greek yoghurt. Beat with an electric beater until smooth, then beat in the cream cheese in.

To serve:
Spread the whipped feta on a plate, and top with the tomatoes. Sprinkle over some fresh thyme if you have it. Serve with crisps to dip.
