For the Lemon Syrup:

250ml Water

125g Caster Sugar

2 Strips of Lemon Zest

  1. Heat the sugar, water and lemon zest over a low heat and stir a couple of times, until the sugar has dissolved
  2. Then bring to the boil, but do not stir, and boil for about five minutes
