500g new potatoes, large ones halved
600g swordfish – approx 2 steaks cut 1 inch thick – I used Sankey’s Fishmongers in Tonbridge
3 courgettes cut into 1 inch slices
For the marinade:
1 large orange, juice & zest
½ lemon juice
4tbsp olive oil
1 chilli, finely chopped
1tbsp fresh chopped mint
salt and pepper
